One Pot Recipe - Lamb Stew

Lamb Stew

What I love about Lamb Stew is that its a one pot dish. This is our family recipe that my grandmother used to make, My mums tells me that her mum would add almost any food stuff they had to hand.
I now make my mums recipe every winter the family.

Ingredients
All ingredients are approx feel free to add more or less adjusting liquids accordingly, There really is no right and wrong with this recipe.

350g of Lean Lamb cut into cubes
2 Onions
1 to 2 handfuls of red lentil
3 Handfuls of pre soaked and semi cooked Pearl Barley
2 heaped Tbs gravy granules per 1 Pint of hot water - Add 1 to 2 pints initially and top up when required.
2 carrot
4 Potatoes
Pre prepared Dumplings (Optional)
There is no need to add any salt to the dish due to the gravy... just a little pepper.
cooking time one and half hour.

Method
Pre-cook pearl barley for 15 minutes. Next add all ingredient to a deep saucepan (Except potatoes and Carrots) along with 1 pint of gravy. Bring to boil and and simmer on a low heat for an hour stirring occasionally, Continue to add water & gravy when required. After 45 minutes add the Carrots and potatoes, Continue to cook on a low heat. Serve with some bread rolls simple healthy meal...also perfect for freezing ahead.
