Caribbean Food Week with Grace's Foods

I have teamed up with Grace Foods to celebrate the UK's biggest ever celebration of Caribbean Food & Drink for Caribbean Food week which runs from 24th - 31st of August, and what better way then to share some delicious products and some recipe ideas to help inspire you and your family. .


With the help of these delicious Grace Foods products I set about to create my very own Caribbean inspired dish.


Dunn's River Jamaican Jerk Seasoning - When I opened the lid I could smell an amazing smell of herbs and spices, Simplly rub Dunn's River Jerk Seasoning into chicken, meat or fish and leave to marinate for several hours, then grill on a barbeque for an authentic Jamaican flavour.On this ocassuon I decided to opt fro my favourite cooking option which is to use a roasting bag,

Ingredients
5/6 chicken pieces
2 tablespoons of Jerk seasoning
splash of oil
Basmati Rice to serve
1 roasting bag

Method
Add the chicken to the roasting bag along with the two tablespoons of jerk seasoning an a splash of oil, Seal the roasting bag and gently rub the jerk seasoning into the chicken, leave for a few hours to marinate. Cook on a low heat cook for 45 minutes always ensure chicken is cooked thoroughly before serving.


I was pleasantly surprised with the results, A delicious moist spicy flavoured chicken
I opted for Basmati rice and a side dish of Callaloo.


Dunn's River Jamaican Callaloo is a popular Caribbean dish and can be served in a variety of ways and is  a perfect complement to a range of Caribbean  dishes such as rice and peas or salads, I opted for a simple spicy sauteed version.

Ingredients
1 tin of Callaloo
Pinch of dried thyme
1 green chili (optional)

Method
Gently fry the onions until soft
Add 1 tin of drained Callaloo along with the pinch of dried thyme and the green chili season well with salt and peeper and serve with your favourite dish. If you love Jerk Chicken then why not try this Hot and Spicy Fry Mix which also can be used with fish,


Dunns River Hot and Spicy fry mix is Hot and Spicy blend of  specially selected  spices blended to deliver delicious, authentic taste which is great for making tasty chicken or fish

Ingredients
6-8 Chicken thighs
Dunns River Hot and Spicy Jerk Chicken fry mix
1 egg or a few tablespoons of milk


Method
Wash and dry chicken, cut into pieces, then dip both sides in whisked egg or milk.Place several tablespoons of Dunn's River Hot & Spicy Jerk Chicken Fry Mix in a plastic kitchen bowl and coated the chicken pieces are evenly.
Deep fry the coated chicken pieces in hot oil for approx 12-15 minutes (if  you have a large breast or wing chicken pieces) cook for 20-25 minutes (if drumstick or thigh chicken) or until crisp and golden. Turn the chicken pieces half-way through the cooking. Alternatively for a healthier option, shallow fry for approx 15 minutes until crisp and golden or oven-bake on a lightly greased baking tray at 200°C for 25-30 minutes, turning half way through cooking.  Or add a few tablespoons of olive oil and two to three tablespoons of the fry mix in a roasting bag, evenly coat and roast for 35-40 minutes.Ensure chicken is cooked all the way through before serving, and if you like it with a extra hot spicy kick why not serve with Grace Hot Pepper Sauce which is the perfect accompaniment to any dish.
