Cod Curry
I love a curry and recently I wanted to try Nadia's Cod and Clementine Curry, but as I'm not very keen on sweet/savoury so I made a few adjustments.
Ingredients
6 cod fillets, cut into bite-size chunks
2 tbsp vegetable oil
2 garlic cloves crushed
1 small onion, chopped
1 tbsp tomato purée
1 tsp turmeric
½ tsp chilli powder
½ tsp curry powder
fresh coriander, and salt
Method
Heat the oil in a pan, add the garlic and onion and cook until soft.
Next add chilli powder, curry powder and tomato puréec, add a little water and cook for 5 minutes.
Add the cod filets, and cook for a few minutes, ensuring cod is white and cooked through. Remove from the heat and add the coriander.
