Yakisoba Chicken Noodles


We love noodles, so why not try to make the classic Japanese dish Yakisoba Chicken Noodles, typically make using chicken or pork with vegetables, This dish is not only quick and simple, but it also tastes great.

Ingredients:
2 tbsp olive oil
1 pk Yakisoba Noodles*
Pk of Shitake Mushrooms (we used 6)
1/4 of a red cabbage sliced
1 onion sliced
2 carrots thinly sliced or grated
2 cloves of garlic
1 cup of soy sauce
2 green chillies



Method:
1 - Heat the oil in large wok or large frying pan.
2 - Saute sliced onion and crushed garlic until soft, add green chillies.
3 - In a separate pan cook noodles as pack instructions.
4 - Add chicken and cook until chicken turns brown, add half of the soy sauce and simmer until fully cooked.
5 -  Stir the cabbage, carrots cook for further 5-10 minutes then add noodles, stir in the rest of the soy sauce.

Adjustments:
 *Yakisoba Noodles are made from*Buckwheat, as we could find these we used whole wheat Noodles.
*After researching the recipe I found a few slight variations, I opted for a slight mix to suit our families tastes, typically the correct way to cook this recipe is to cook chicken and add vegetables towards the end for a stir fry flavour and crunch. As the kids are not too keen, I opted to add the vegetables whilst I cooked the chicken so they were softer.
