We were delighted to recreate a delicious recipe curated by ex-Great British Bake Off star, Holly Bell, which is inspired by the flavours of Fruit Shoot.
Apple & Pear Pancakes
Ingredients:
For the apples and pears
- 1 apple cored and cut into 1cm chunks
- 1 pear cored and cut into 1cm chunks
- 1 tbsp lemon juice
- 1 large egg
- vegetable oil
- maple syrup serving
For the Pancakes
- 180ml milk
- 30ml lemon juice
- 130g plain flour
- 1 tsp baking powder
- 1/2 bicarbonate of soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 large egg
- vegetable oil
- maple syrup for serving
Method:
- Place the apples, pears lemon juice and cinnamon in a small saucepan and cook over a low heat for about 10 minutes until apples are soft, set aside.
- Make the pancake batter, mix the milk and lemon juice in a jug. In a bowl stir the flour, baking powder, bicarbonate of soda, salt and cinnamon together.
- Crack the egg into the jug with the milk and lemon on it. Whisk the egg into the soured milk, then pour this liquid over the dry ingredients. Use a fork to mix the ingredients until they are combined, then stir in the apples and pears. Don't over whisk the pancakes.
- Heat a tablespoon of oil in a large frying pan over a high heat, then ladle 2 tablespoons of the batter into the pan. After a minute when the pancake is golden brown underneath turn over. once pancake is cooked both sides serve with maple syrup and apple and pear compote.
