Chicken Curry
500g chicken cubes
Handful of spinach (optional)
3-4 onions
1 tbsp of tomato puree
4 tbsp of oil
2 tbsp of garlic paste
1 tbsp of ginger paste
1 tsp cumin powder
1/2 tsp turmeric
1/2 red chili powder
2 tsp garam masala
1 tsp of mixed curry powder
2 tbsp of salt
Dried Spices (please note, if you grind the flavour will be fuller *optional)
2 bay leaves
5 cloves
5 green cardamon pods
Fresh Coriander to taste
Method -
* Heat the oil add the dry spices and chopped onion until onions soften, add garlic and ginger
* Add powder spices, tomato puree and chicken along with the salt, cook until the oil begins to separate or until the mixture begins to dry out
*Add 200/300mls of water, or enough so so that the chicken cooks in the water and spices, bring to the boil then reduce heat and cook on a low heat for 40 minutes to an hour. Garnish with fresh Coriander.
