This delicious Chicken Fajita meal is a great addition to add to your weekly mealtimes, not only is it quick and easy, it can be tweaked so enable you to add your favourite schwartz herb, spice or vegetables.
I love to use Paprika in this recipe as it has subtle earthiness, with a sweet and peppery taste, you can use Smoked paprika if you wish if you want a more chargrilled flavour.
Ingredients
I thinly sliced red and 1 thinly sliced green peppers
1 white onion, chopped
2 tablespoons of rapeseed oil
2 cups uncooked penne pasta (6 oz)
500g chicken in small cube or strips
1 /2 tablespoon of Schwartz paprika
1/2 teaspoon of cumin
1/2 teaspoon of coriander
2 cloves of garlic
1 or /2 green chillies (depending on how spicy you would like it)
500g pasta sauce
40g grated cheese (optional)
Recipe
- Cook the pasta in hot water according to the pack instructions, and drain well and cover.
- Next heat the rapeseed oil in a frying pan on a high setting. add the onion, garlic and green chillies for a few minutes
- Add the cubed chicken and seal the chicken until its starting to brown.
- Add the paprika, cumin and coriander and cook for a few more minutes
- Add the peppers and pasta sauce and then simmer, uncovered on high heat for 15 to 20 minutes, or until the chicken is cooked.
- once the chicken is cooked, stir through the pasta
- To serve, top with the grated cheese
